A BOCUSE CHEF –  French Gastronomy With An Asian Touch

Pablo Blattmann was born and grew up in La Paz in Bolivia. With his mother being from Switzerland and his father from Bolivia, the two cultures offered him an insight in different universes of flavors. Since an early age he was always in his mother’s kitchen, who by the way was a very good cook herself. Passionate about Asian culture and food, he soon discovered the scents of Japanese and Thai cuisine, which affect his creations today – his dishes carry a refreshing touch of Asian influence.

He went to Lyon, France’s culinary capital, to learn from the Master of French Gastronomy Paul Bocuse at the renowned “Institute Paul Bocuse”, graduating with a Bachelor’s degree from the University Lyon 3.

Pablo’s work experience includes:

“Chateau de la Chevre d’Or”, Eze, France, 2 Michelin Stars – Member of Relais & Chateaux”

“SUSU’S, Basel, Switzerland, 3 Toques Guide Bleu”

“Seven, Ascona, Switzerland, with Cooking World Champion Ivo Adam”

“Sheraton Grande Laguna, Phuket, Thailand” And Others

He has been living in Phuket since 2007 and created DeDos in 2008.

The Masterpiece, the Foie Gras Creme Brûlée was a revelation. I actually have had it before from Chef Pugin of Palme d’Or at The Biltmore and this one was just as good or maybe even better. The foie is whipped into the creme and the ingredients collide like magic. The sweet crunchy creme brûlée top contrasted with the silky enchanting foie flavor is one of the best things you can ever taste.



There are two words that I am wary about when it comes to dining out, french and fusion. I have been to so many restaurants who promised both but were only as good as looking posh and pretentious. So when I was invited to have dinner at De Dos last week, I was hesitant inspite having two of my friends telling me that the food is absolutely good and “they serve really good homemade…..


There are many places on the island that claim to give a serene and impeccable fine-dining experience, and I am happy say that DeDos is hands down one of the best by far. With Chef Pablo’s mastery of incredible cuisine and their dedication to making each guest’s experience one to remember, DeDos has made a huge mark on Phuket’s culinary map and should absolutely be on everyone’s must-try.
